Good Plans Gone Bad

Sometimes even the best laid plans need to be changed.....

Sometimes a nagging pain forces you to skip your workout and cross an errand off your to-do list instead....

Sometimes even a list doesn't mean you'll get everything you needed.....

Sometimes you'll remember these even though you forgot bagels, cream cheese, potatoes AND zucchini....

Sometimes you'll want to do this with them...

Sometimes you'll realize you should add lots (and lots) of them to your cookie dough instead.....

Sometimes you'll realize every baker does a taste test and you should too (and love it!!!)...

Sometimes you should share the recipe of the yummy cookies you are making with your friends....

Super Duper Delicious Oatmeal Cookies

1 1/2 cup unbleached flour
1 1/2 cup brown sugar
1 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1/2 tsp cinnamon
1 cup softened butter
1 egg
2 1/2 cups rolled oats
1/3 cup walnuts
Lots of chocolate chips (don't measure, just pour)

With the rack in the middle position, preheat the oven to 180°C (350°F).

In a bowl, combine the flour, baking powder, cinnamon and salt. Set aside.

In another bowl, cream the butter with the brown sugar and vanilla using an electric mixer. Add the egg and beat until smooth. With the mixer on low speed, add the flour mixture. Stir in the rolled oats, chocolate chips and walnuts using a wooden spoon.

Spoon onto baking sheet

Bake 1 sheet at a time for about 13 minutes; the centre of the cookie should still be soft. Let cool slightly.

Sometimes you'll be kinda glad it was an unexpected rest day...

  1. Sometimes you realize the grass isn't always greener and maybe your life is even better than you knew it was! I'm so glad I learned that today.

  3. It happens to me for sure. I swore I wouldn't go to the grocery store until Sat... Then I went today but I said I'd only get a few things... I ended up getting all kinds of stuff, including all the ingredients for a sunday brunch. Yeah. I decided to have a sunday brunch in the middle of the grocery store. Ughhh! I'm so horrible at food budgeting!

  6. I will try any recipe that involved massive amounts of chocolate chips, and has the words "super duper" in the title. I think impromptu rest days are the best, and I always appreciate them more.

  8. Yum, I want those cookies! :)

Oh, we were supposed to have a lunch in today so I didn't bring my lunch and it was canceled..its rainy and nasty outside so I went in on ordering pizza (not so healthy) but added spinach as a topping, so I feel a bit better about it?! :)

  9. Haha, I often forget to buy essentials at the grocery store because I am so distracted by the baking aisle :)

  11. OMG these look SO good!! And I am the queen of forgetting things and changing my plans. For someone who is so planner-crazed, I really need to do a better job sticking to it lol!

  12. Those look SOOO good!

I forget some pretty major stuff at the store this week. Ummm like tortellini for tortellini soup.

Change of plans happens all the time in my life, so I have adopted a "whatever" attitude. I still get pissed/hurt/annoyed when things don't go my way, but I've learned you just have to let them go!

  14. So today's gone pretty much according to plan *knock on wood* but being sick Sunday and Monday pretty much threw off my week - and I've been playing catch-up since then - getting done the bare minimum of what I need to do and pushing the rest to the weekend! So this whole week has been about playing everything by ear and getting done what I can!
Oh, and those cookies look amazing... my sugar cravings are killing me!

  15. I'm having an unexpected rest day today . . . it hurts to swallow (so much that I haven't eaten dinner) and my ears are killing me. I think I have to admit that I've been sick for too long (flu for weeks and lingering side effects for just as long). I'm going to have to hit up the doctor tomorrow.

The cookies look delish btw!!! :)
