I mentioned last night that I had a craving for some couscous salad. Well folks, here it is:
The fresh veggies
Ready for the salad
All mixed up with the couscous
And voila! Dinner is served!
Couscous Salad
1 diced red, yellow and green pepper
3 diced green onions
1 cup cherry tomatoes
2 tbsp chopped parsley
3/4 cup pre-shredded carrots
1 box Casbah lemon spinach couscous
Cook coucous according to directions
Chops all vegetables to preferred size
Mix prepared couscous with vegetables
Layer on a bed of baby spinach, drizzle with olive oil and lemon juice and serve
A quick, easy and healthy summertime meal....bon appetit!
