Substitute Teacher

The nice thing about having volunteer instructors at my gym is that the full time instructor/facility coordinator has a back up plan in the event that he is sick. Enter me, otherwise known as the back up plan.

The nice thing about teaching a class like Tabata is that the routine can be put together in a pinch and used to cover for a scheduled step class (which I couldn't teach to save my life!)

The nice thing about life is that you can't always plan for everything and sometimes you just go with the flow. Like today for example, when the email came in for me to teach after I had run 7.5 miles. (which is 2k more than my training plan...ya me!)

The nice thing is that sometimes, when I really, really need to, I can find some extra energy and pull off small feats like this. Never fear, Samantha is here!!!

That being said I am utterly and completely exhausted! Thank goodness for the convenience of healthy yet prepared foods on a night like this





































Don't get me wrong, I am all for homemade lasagna goodness but if I'm too lazy tired to cook and it comes down to this or McDonalds I'm taking this each and every time (The Boyfriend would like me to point out that he does not endorse that statement....boys!)

And now my friends, if you will excuse me I have a date with this bad boy

So rell me, what's your go-to food on a night when you are just too tired to make dinner??

  1. This isn't exactly a convenience food, but I usually just chop up a bunch of veggies and throw them in a frying pan with some canned tomatos, balsamic vinegar, and herbs. It's a big veggie mess but it tastes so good! Enjoy your foam rolling!

  2. Usually I opt for super easy, which for me, is egg whites with spinach on top of a slice of Ezekiel Bread. Carbs and protein! :D

  3. I think we all need healthy convenience foods on hand and a stocked freezer. Jealous of your foam rolling, I need to learn how. My husband is obsessed.

  4. Ha! That would be every night I'm too tired to make dinner. A lot of times I just have some steam in a bag veggies and maybe some peanut butter toast. Not the best, but I usually eat more during the day and lighter for dinner since I work out at night (working out on a full stomach doesn't agree with me so much!).

  5. When I don't want to cook, I make a can of chili, scrambled eggs w/veggies in it, pasta, or something that's frozen I can stick in a skillet!

  7. breakfast for dinner (eggs, toast) is my go to when I am exhausted and i don't feel like cooking and the kiddos love it!

  8. Ahhh, the foam roller. Love it. Hate it. Hurts soooo good. My "go-to" dinner would look something similar to yours.

  9. on nights when i don't feel like pulling together an elaborate meal, i usually opt for a one-pot veggie chili.

    i quickly saute a chopped onion and garlic in a bit of olive oil in the bottom of a medium pot. then dump in (seasoned) canned tomatoes, a can or two of (rinsed) beans, some salsa, some marinara and any frozen veggies or veggie leftovers i have on hand. it's different and delicious everytime and is ready in no time : )

  10. My go-to dinner when I'm home alone is usually pretty embarrassing. Cheese + crackers + a glass of wine.

  11. It's sandwiches for me! Just assembling. Or a Boca burger if I feel like turning on the stove!

  12. I'm the queen on anything that can be assembled in minutes - sweet potato, rice 'n beans, pasta and veggies, stir fry. I also like making things that can do double duty as lunch for the next day.
